Kaiten-zushi is the term used for sushi on small plates that goes round on a conveyor belt. This allows customers to pick what they want as it goes past.
回転寿司とは、寿司をのせた小皿をベルトコンベアで運び、客が好きな皿を取って食べるスタイルの寿司です。
ベルトコンベアがカウンターの手前を回っていることから、回転寿司と呼ばれます。
回転寿司は皿の色や柄で価格が決まっていることが多く、皿の枚数で精算するのが一般的です。
回転寿司第1号は、1958年に大阪で開業した「廻る元禄寿司」です。
安さと早さが売りの回転寿司は、一気に全国に広まりました。
江戸前寿司のように、客の前で職人が寿司を握る回転寿司もありますが、大型店では、奥の厨房で作られた寿司がベルトコンベアで運ばれてきます。
電車の模型などが寿司を運んでくる店や、皿の返却時におまけが当たる店もあり、子どもに人気です。
